We work from Auckland with a simple idea: everyday nuts become more interesting when their origin, handling and roast are treated as part of the product rather than hidden in the background.

We buy for flavour differences that can actually be explained.

That means asking concrete questions about each lot: growing region, crop timing, drying, size grading, storage and how the kernel behaves under heat. We then use those details to decide whether a lot belongs in the raw range, a roast programme or a comparative tasting box.

We do not pretend provenance makes every batch automatically better. It simply gives us a more useful starting point for evaluating freshness, texture and character.

Products identify the nut, preparation style, pack weight and ingredient details needed for straightforward purchasing and use.

Packaging & dispatch

Designed to protect crunch without unnecessary theatre.

Nut quality changes with oxygen, heat, moisture and time. Our packing choices are therefore focused first on barrier performance and resealability. Decorative elements are kept secondary to protecting the product.

Orders are assembled in Auckland and prepared for New Zealand delivery. We group items efficiently to reduce excess packing volume while keeping fragile kernels protected from crushing.

For customers building a tasting flight, labels remain clear enough that samples can be compared in a deliberate sequence. Mixed snack packs, by contrast, are designed for convenience rather than formal tasting.

Where a product is particularly sensitive to handling or has a shorter optimal freshness window, the product description provides practical storage guidance.

From incoming lot to shelf

How a nut earns a place in the Nuvellianessara range.

We begin with the questions that matter to flavour: variety, growing region, harvest period, drying and storage history, kernel condition and intended format. Samples are assessed side by side rather than in isolation, because comparison makes it easier to decide whether a new lot adds a genuinely different texture or flavour profile to the range.

When a lot is selected, we decide whether it is best presented raw, gently roasted or used in a comparative flight. The roast is treated as part of the product specification, not a blanket process. Dense kernels and delicate kernels react differently to heat, so time and intensity are adjusted with the goal of keeping the underlying nut recognisable.

Packing is the final quality step. We work in manageable batches, minimise unnecessary open-air handling and organise stock so older packed batches move before newer ones. Product descriptions are written around concrete sensory features and practical uses. We prefer a clear explanation of crunch, aroma, origin and format to oversized promises.

That approach also shapes our tasting sessions. What we learn while comparing lots feeds back into the way we describe shop products, and customer questions help us improve the information supplied with future selections.
